Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs at room temperature
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • ½ cup mini chocolate chips
  • 1 cup powdered sugar
  • 2 tbsp milk for the glaze

Instructions

  • Preheat your oven to 350°F (175°C).
  • Prepare your loaf pan by greasing it with butter or non-stick spray.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  • In another bowl, beat the eggs, then add the oil, vanilla extract, and peppermint extract. Mix well until combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be cautious not to overmix.
  • Fold in the mini chocolate chips gently, ensuring an even distribution without overworking the batter.
  • Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove it from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • In a small bowl, mix the powdered sugar and milk to create a smooth glaze.
  • Drizzle the glaze over the top of the cooled loaf, letting it drip down the sides for a beautiful presentation.
