Heat olive oil in a large skillet over medium heat.
Add diced onions and bell pepper; sauté for 3-4 minutes until softened.
Stir in minced garlic and Cajun seasoning, cooking for an additional minute.
Add chicken breasts, cooking until golden brown on all sides, about 5-7 minutes total.
Pour in chicken broth and bring to a boil; then add the rice, stirring well.
Reduce heat to low, cover, and simmer for 20 minutes until rice is cooked and liquid is absorbed.
Stir in heavy cream, and cook over low heat for an additional 5 minutes.
Season with salt and pepper to taste and serve hot.
