Ingredients

  • 1 lb chicken breast cut into cubes
  • 8 oz penne pasta
  • 1 cup basil pesto
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C) and prepare a large baking dish.
  • In a large skillet, heat olive oil over medium heat. Add cubed chicken, seasoning with salt and pepper.
  • Once the chicken is cooked through, add the penne pasta to the skillet along with the basil pesto and heavy cream.
  • Mix in half of the mozzarella and Parmesan cheese, stirring until melted and incorporated.
  • Transfer the mixture to a greased baking dish and top with the remaining cheeses.
  • Bake uncovered for 20-25 minutes until the cheese is bubbly and golden brown.
