  • 8 oz penne pasta
  • 1 cup fresh peas
  • 1 cup sliced mushrooms e.g., cremini or button
  • 2 cups heavy cream
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 garlic clove minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup bread crumbs

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cook the penne pasta according to package instructions until al dente; drain and set aside.
  • In a large skillet over medium heat, sauté the garlic and mushrooms in a bit of oil until softened, about 5–7 minutes.
  • Stir in the peas, salt, and pepper, cooking for another 2–3 minutes just until heated through.
  • Pour in the heavy cream and bring to a gentle simmer, letting it thicken slightly, about 5 minutes.
  • Remove from heat and mix in 1 cup of mozzarella and ½ cup of Parmesan until melted and combined.
  • Combine the cooked pasta with the creamy mixture and stir until evenly coated.
  • Transfer the mixture to a greased baking dish, sprinkle the top with the remaining cheeses and breadcrumbs.
  • Bake for 20–25 minutes, until the top is golden brown and bubbling.
  • Let it cool for a few minutes before serving, garnishing with parsley if desired.
