Ingredients

  • 4 medium zucchini sliced
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Prepare the zucchini by slicing it into thin rounds.
  • In a large bowl, combine the zucchini, chickpeas, minced garlic, and oregano.
  • Add salt and pepper to taste, then stir in half of the mozzarella and Parmesan cheeses.
  • Transfer the mixture into a greased baking dish.
  • Top evenly with breadcrumbs and remaining cheeses.
  • Bake in the preheated oven for 25-30 minutes until golden and bubbly.
