- 4 medium zucchini sliced
- 1 can 15 oz chickpeas, drained and rinsed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Preheat the oven to 375°F (190°C).
Prepare the zucchini by slicing it into thin rounds.
In a large bowl, combine the zucchini, chickpeas, minced garlic, and oregano.
Add salt and pepper to taste, then stir in half of the mozzarella and Parmesan cheeses.
Transfer the mixture into a greased baking dish.
Top evenly with breadcrumbs and remaining cheeses.
Bake in the preheated oven for 25-30 minutes until golden and bubbly.
Let it cool for a few minutes before serving.
