- 2 tablespoons olive oil
- 1 pound beef chuck cut into 1-inch pieces
- 1 onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 garlic cloves minced
- 1 teaspoon dried thyme
- 6 cups beef broth
- 1 cup pearl barley
- 2 bay leaves
- Salt and pepper to taste
Heat olive oil in a large pot over medium-high heat.
Add the beef and brown on all sides, about 5-7 minutes.
Stir in the diced onion, carrots, and celery; cook for 4-5 minutes until softened.
Add the minced garlic and dried thyme; cook for an additional 1-2 minutes until fragrant.
Pour in the beef broth and add the bay leaves and barley.
Bring the mixture to a boil, then reduce to a simmer; cover and let cook for 1.5 to 2 hours.
Season with salt and pepper to taste; remove bay leaves before serving.
