  • 4 ounces pancetta diced
  • 2 large eggs
  • 1 cup grated Pecorino Romano cheese
  • 1 clove garlic minced

  • Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  • In a skillet, cook the diced pancetta over medium heat until crispy. Remove from heat and set aside, leaving the drippings in the pan.
  • In a mixing bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.
  • Add the drained spaghetti to the skillet with pancetta drippings. Toss to coat the pasta in the flavorful bacon fat over low heat.
  • Remove from heat, then quickly pour in the egg-cheese mixture, tossing continuously to create a creamy sauce. If it gets too thick, add reserved pasta water to loosen.
