Ingredients

  • 3 pounds of russet potatoes peeled and cubed
  • 1 cup of sour cream
  • 1 cup of shredded sharp cheddar cheese
  • 1/2 cup of ranch seasoning mix
  • 1/2 cup of crumbled bacon
  • 1/4 cup of green onions sliced
  • 1/2 cup of milk
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • Prepare the potatoes by peeling and cubing them.
  • Boil the cubed potatoes in salted water until tender.
  • Drain the potatoes and return them to the pot.
  • Add sour cream, milk, ranch seasoning, salt, and pepper to the potatoes.
  • Gently fold in half of the cheddar cheese, bacon, and green onions.
  • Transfer the mixture to a greased baking dish.
  • Sprinkle the remaining cheese, bacon, and green onions on top.
  • Bake for 25-30 minutes, or until bubbly and golden.
  • Allow to cool for a few minutes before serving.
