Preheat your oven to 375°F (190°C).
Prepare the potatoes by peeling and cubing them.
Boil the cubed potatoes in salted water until tender.
Drain the potatoes and return them to the pot.
Add sour cream, milk, ranch seasoning, salt, and pepper to the potatoes.
Gently fold in half of the cheddar cheese, bacon, and green onions.
Transfer the mixture to a greased baking dish.
Sprinkle the remaining cheese, bacon, and green onions on top.
Bake for 25-30 minutes, or until bubbly and golden.
Allow to cool for a few minutes before serving.
