Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 pound salmon fillet skin removed
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons olive oil
  • 1 bell pepper diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add diced onion and bell pepper; sauté until softened, about 5 minutes.
  • Stir in minced garlic and sauté for another minute until fragrant.
  • Add the cherry tomatoes and Cajun seasoning; stir to combine.
  • Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  • Gently nestle the salmon fillet into the mixture, cooking for about 5-6 minutes.
  • Squeeze lemon juice over the dish and season with salt and pepper to taste.
  • Allow the dish to rest for a couple of minutes before serving.
