Ingredients

  • 8 ounces spaghetti or penne
  • 2 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 teaspoon Italian seasoning
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions until al dente, then drain and set aside.
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet.
  • While the pasta cooks, prepare the chicken by seasoning it with salt, pepper, and Italian seasoning, then coat in breadcrumbs.
  • Heat olive oil in a pan over medium heat and cook the breaded chicken for about 3-4 minutes per side until golden brown.
  • Transfer the seared chicken to the baking sheet and spread marinara sauce over each piece. Top generously with mozzarella and sprinkle with Parmesan cheese.
  • Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
  • In the pasta pot, combine the drained spaghetti with the remaining marinara sauce, adding reserved pasta water as needed to reach desired consistency.
  • Plate the pasta and top it with the baked chicken, spreading more marinara and extra cheese if desired.
  • Serve immediately, enjoying the combination of flavors and textures.
