- 1 pound smoked sausage
- 1 medium onion diced
- 1 green bell pepper diced
- 2 celery stalks diced
- 4 cloves garlic minced
- 1 can 14.5 ounces diced tomatoes
- 2 cups long-grain rice
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- 2 green onions sliced (for garnish)
Prepare the ingredients.
Heat a large pot over medium heat and add the sausage.
Add the onion, bell pepper, and celery; sauté until soft.
Stir in the garlic and cook for another minute.
Incorporate diced tomatoes with their juices.
Add rice, chicken broth, Cajun seasoning, and bay leaf.
