Ingredients

  • 12 oz rigatoni pasta
  • 1 lb boneless skinless chicken thighs
  • 2 tbsp Calabrian chili paste
  • 1 cup heavy cream
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Cook the rigatoni according to package instructions until al dente, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Season the chicken thighs with salt and pepper, then sear until golden brown and cooked through, about 6-7 minutes per side.
  • Remove the chicken and let it rest for a few minutes before slicing it into bite-sized pieces.
